Mexican Quinoa Salad with Black Beans, Corn, and Tomatoes
If you've never cooked with Quinoa, now's the time. It's a super easy food to cook, it's packed with protein, and it goes with almost anything!
I love this fresh, easy to make meal. It's full of protein, fiber, and fresh veggies. Also, all three of my kids with their own unique pallets love it so you know it has to be good!
The great thing about this recipe is its adaptability - dairy free? Leave out the cheese. Jalapenos too intimidating? Use a sweet bell pepper for a different taste. It's infinitely customizable and still delicious! We like to eat it with crunchy tortilla chips. Yum!
